I love food. & I’ve always loved food, I’ve never been a picky eater and often you’ll hear Matt telling people all the weird things I eat.
I can remember my roommates in college laughing at me because I would literally eat a cucumber like a banana. I’d just peel it and eat the whole thing, as I walked around the apartment chatting. I’m really a lover of food and that will never change.
So when I travel, you’ll always see me eating the best that country has to offer. When I went to Italy, I literally ate a different gelato every night, and I was there for three weeks (haha). I honestly believe eating local foods is actually one of the best ways to embrace the local culture.
However eating out every night can start to take a toll on your belly, so I try to balance my diet while on vacation, which can seem impossible at times.
Since eating healthy on vacation can be a trick of the traveler’s trade, I’m sharing how I eat healthy during vacation. Now I’m not a health specialist, at all, I’m just sharing what works for me & I’d love to hear how you stay healthy on your vacations below!
Anyway, I’m not a breakfast person by nature, so my recipe for eating *somewhat* healthy on vacation is to eat a light breakfast and lunch. Matt & I would wake up and head to our hotel’s restaurant and I’d settle for one egg, a plate of fruit, black coffee and a side of bacon; guilty as charged.
By keeping breakfast light, my belly is already off to a good start, while I’m not a picky eater my stomach 100% is and it’s important to start my stomach off on the right side of the bed.
One of the best ways to embrace healthy eating is to eat that region’s healthy food. I LOVE coconuts and you can just say I ate my weight in coconuts throughout the day. I’d be lounging on the beach, eating my coconut, singing Moana and being 100% content with life.
The people at our hotel’s buffet thought I was crazy because I would walk out with about two coconut’s worth of meat in my purse. Finding healthy, natural snacks to chomp on throughout the day, can keep you feeling fine and most importantly not “hangry”.
For lunch, I ate an acai bowl basically every day! I found Eduardo’s Beach Shake on Palm Beach in Aruba, and let’s just say the pictures don’t do the bowls justice. To be honest, I love acai bowls because they remind me of my time in California. So come 1:00, like clockwork, I would make Matt walk with me in the heat of the sun to grab a fully loaded (obvi) healthy lunch.
Come dinner, my belly was feeling great, my coconut meat was all eaten up, and my stomach was ready for some heavy duty Aruba food. I’m so lucky to have amazing readers that recommended some KILLER dinner places, so stay tuned for a travel guide with all those recommendations.

Such stunning photos Audrey! The shorts are super cute and I just love your hat, it’s so important to wear a hat in the hot sun! I always find it a struggle to eat healthy when traveling but after a recent trip to London, I think I have it down now. Breakfast is a quick trip to a local grocery store for fresh cut fruit or a yogurt followed by the all important caffeine stop. Lunch is something quick, like a sandwich or sub, and then dinner is finding the best local restaurant and making sure there is room for dessert. xx Rox-Anne Celebrating This Life
