Thank god for Pinterest, am I right!? The Autumn Appetite Series finally got me outside of my normal ‘baking’ comfort zone and pushed me right into the Pinterest baking zone, OH BOY!
I usually (epically) fail when it comes to recreating Pinterest recipes, however when I saw this recipe for Harvest Caramel Corn, I knew I could do it. It was so simple, super messy, but overall cheap and simple.
So let’s jump right into the recipe & what you’ll need!
Pop 10 cups of popcorn (either on the stove or in the microwave, doesn’t matter).
Lay the popcorn on a baking sheet, covered with aluminum foil and salt those kerrnals (like reallllllly salt them!)
Now let’s make the caramel sauce: melt one cup of butter on medium heat, add one cup of brown sugar and stir until melted. Let the mixture come to a boil and boil for 5 minutes.
Four minutes into the boil add your two tps. of vanilla extract, and after boiling for 5 minutes, add the 1/2 teaspoon of baking soda!
Stir for one minute until the mixture turns a lighter color and thicker texture.
Drizzle most of the caramel mixture over the popcorn and use a spoon to mix the popcorn and cover all the popcorn
Now drizzle the caramel you have left over the popcorn and add the pieces of candy to the mix directly after (so they stick!).
Let the popcorn cool & enjoy! So simple and a great snack to eat while watching Monday Night football, Matt would agree. xx Aubrey
