Helloooo & Happy Monday. Last week was the definition of blahhhh, as we had 8 straight days of rain here in CT (ew). I’m so excited to start off a new week with warmer weather & a fully booked week of TCC adventures.
Also I’m going to Boston on Tuesday & Matt comes back to visit on Wednesday, soooo this week is already a winner.

Anyways, I love sharing recipes with you guys and with the warmer weather rolling in, I had to share my go-to summer salad.
The recipe is beyond simple and you basically just chop it all up & throw it in the bowl. I’ve listed all the supplies below:
2 bags of pre-packed spinach
1 red onion
2 green apples chopped up
1 bag of sliced almonds
(make sure to toast them over the stove to get them nice & crunchy)
1 bag of cheddar cheese (feta cheese also works)
A few slices of cooked bacon
What’s my favorite part of the salad, you ask??? Well it’s the bacon. Throw bacon on anything and it’s an instant winner in my book.
I always top this salad off with some white balsamic or citrus balsamic dressing. Just a little dressing goes a long way with this salad.
