Helloooo & Happy Monday. Last week was the definition of blahhhh, as we had 8 straight days of rain here in CT (ew). I’m so excited to start off a new week with warmer weather & a fully booked week of TCC adventures.
Also I’m going to Boston on Tuesday & Matt comes back to visit on Wednesday, soooo this week is already a winner.
Anyways, I love sharing recipes with you guys and with the warmer weather rolling in, I had to share my go-to summer salad.
2 bags of pre-packed spinach
1 red onion
2 green apples chopped up
1 bag of sliced almonds
(make sure to toast them over the stove to get them nice & crunchy)
1 bag of cheddar cheese (feta cheese also works)
A few slices of cooked bacon
What’s my favorite part of the salad, you ask??? Well it’s the bacon. Throw bacon on anything and it’s an instant winner in my book.
Anyways I’m off to Boston tomorrow to get some exciting TCC work started. I’ll be shooting some outfit pictures while I’m there too; so if you have any suggestions for epic New England backgrounds, let me know below!
